Ingredients

Ground Turkey 1 lb
Cumin 1 tsp
Chili Powder 1/2 tsp
Salt 1 tsp
Black Pepper 1/4 tsp
Cayenne to taste
Olive Oil as needed
Onion 1/2 large, diced
Cauliflower Rice 10 oz frozen
Garlic 3 cloves, minced
Black Beans 1 can (15 oz), drained
Enchilada Sauce 15 oz
Salsa 1 cup
Corn Tortillas 5–6 small, cut into strips
Shredded Cheese 1 cup
Cilantro for garnish

Steps

Step 1: Cook ground turkey with cumin, chili powder, salt, pepper, and cayenne until browned.

Step 2: Heat oil; sauté diced onion and cauliflower rice, then add garlic and cook until fragrant.

Step 3: Stir in cooked turkey, beans, enchilada sauce, and salsa; simmer a few minutes.

Step 4: Stir in corn tortilla strips and sprinkle shredded cheese on top.

Step 5: Cover and cook until cheese melts; garnish with cilantro and serve.
